Rapidly assimilable natural flavour "Petals of Roses"
The
latest development of Technofilter Ltd is a new premium quality natural product
having no analogues on the world market - a food additive, a highly active
rapidly assimilable natural flavour, the flavour enhancer "Petals of Roses".
The
flavour enhancer is produced by
treatment of rose essential oil absolute using baromembrane processes. The
finished product is practically free of impurities contained in untreated rose
absolute (paraffine, terpenes and several other microimpurities). Specially
purified rose absolute contains the main flavouring components of roses (the
data were obtained by gas-liquid chromatography): phenyl ethyl alcohol
(26.90%), linalool (16.30%), citronellol + nerol (14.83%), geraniol (6.51%),
ethyl laurate (4,87%) and farnesol (1,43%) and constitutes the flavouring
component of the flavour enhancer.
At
present the rapidly assimilable natural flavour enhancer "Petals of Roses". is
extensively used in the beverage industry. It proved its worth not only in
production of vodkas, brandies, liqueres and other spirits, but also in
production of low-alcohol and soft drinks.
The
flavour enhancer "Petals of Roses" is intended for softening and developing
full-fledged flavour of vodkas and for refining organoleptic properties of
vodkas, brandies, whiskies, rums, others alcoholic beverages and soft drinks. The
flavour enhancer "Petals of Roses" improve organoleptic properties of ice-cream, drinking yoghurts, milk
cocktails, chocolate milk and flavoured milk.
Examination
of industrial samples of spirits produced using the flavour enhancer "Petals of
Roses" has shown that the flavour enhancer promotes the formation of ethyl
laurate that improves organoleptic properties of several spirits, while keeping
physico-chemical properties of the drinks unchanged. The flavour enhancer makes
it possible to raise the class of vodkas. All alcoholic beverages made using
the flavour enhancer "Petals of Roses" are granted the Highest Recommendation
rating. The flavour profile of low-alcoholic beverages and soft drinks produced
using the flavour enhancer is softened and harmonized, deprived of alcoholic
tones and other objectionable after-tastes and odours. When used in drinks
produced using synthetic sweeteners, the flavour enhancer eliminates or softens
the specific taste of the sweetener, rounds off the race and taste.
Organoleptic evaluation of beverages produced using the flavour
enhancer and maintained in controlled conditions during the shelf-life has
revealed an organoleptically significant development of flavour and their
stability during the shelf-life.
The
flavour is rapidly assimilable by alcoholic beverages stored in both glass
containers and oak casks as well as by low-alcoholic beverages and soft drinks.
The tradition of using ultrapure rose absolute in producing strong
alcoholic and low-alcohol drinks goes back to Saradzhev's cognacs, Shustov's
famous cognac, Shustov's liqueurs and brandies. These beverages were awarded
Grands Prix at prestigeous exhibitions in Nizhny Novgorod (1896), Paris (1990, 1904, 1909), Turin (1902, 1911), etc. Owing to the highest
quality of the products, Shustov's and Saradzhev's distilleries were granted
the honorary titles of Suppliers of the Court of His Imperial Majesty.
At present the flavour is included into formulations by distillery
enterprises in Russia and abroad (Lithunia, Mongolia, Kirghizia, Georgia, Кazakhstan and

Vodka
"Istok Premialnaya" produced by open stock company Istok (Beslan) using the
flavour enhancer Petals of Roses was awarded Grand Prix at the international
competition United Vodka - 2008
in Cannes (France).

Introduction recommendations
Testing - preparation of a test sample
The calculated amount of the flavour enhancer Petals of Roses is
dissolved in rectified ethyl alcohol in the ratio of 1:10, until a transparent
solution is obtained. The solution is then added in accordance with recommended
dosages to 1 litre
of the drink.
Procedure of adding the flavour enhancer to the blend
The required amount of the flavour enhancer is dissolved in rectified
ethyl alcohol in the ratio of 1:10, until a transparent solution is obtained
which, for further dilution, is added to 5 litres of the drink
being prepared. The resultant solution, after being passed through a carbon
column, is introduced through the upper hatch into the blend tank containing
the drink (water-alcohol mixture). The blending is carried out in accordance
with the technology used at the factory. The flavour enhancer can added into
the blend alone or in combination with other ingredients.
If the "Silver filtration" process (Patent of Russia No 2222586) is
used, the flavour enhancer can be introduced both before or after being passed
through cartridges with silver-containing activated carbon of the ЭПСФ.УAg0.4 grade and activated
carbon with impregnated platinum. The mode of blending the drink is "2 circls
itself".
